This Lentil is Orange-Brown in color when it is dry, will develop more to an orange as it sprouts. Easy to grow, Small, 3/16" beans are quick to sprout. With their bean-like flavor and texture, lentil sprouts are great for eating as fresh sprouts or used in cooked dishes. But they are almost impossible to find. The vast majority of crimson lentil in stores is split, and only suitable for cooking. The tails should be at least 1 inch long for best digestibility. Longer is also very good, but once a small leaf develops, the taste changes. So tail length becomes a matter of personal preference. Lentil sprouts have more protein than tofu, almost no fat, and are not very starchy. Our Lentils come from sources which are certified organic.
