Lentils are such large part of the vegetarian protein class. They are unprocessed and quicker to make than dried beans as their is not any soaking that is required, Has a wonderful nice, earthy flavor that blends very well into a variety of dishes. They are also a Great Meat Substitute,
Put 1 to 2 Tbsp. seed in a wide mouth jar. Cover with mesh and secure with rubber band. Add water, swirl, and drain. Add 1-cup cool water and soak for 10 to 12 hours. Drain.
RINSE –2-3 times a day, refill jar with cool water, swirl, and drain. Invert jar and prop at an angle in a sink or bowl.
ENJOY – Ready in 3 to 4 days. Refrigerate to store.
Soak: 10-12 Hours
Rinse/Drain: 2-3 times per day
Harvest: 3-4 days
Yield: 2 to 1 (1 lb of seed will produce 2 lbs of sprouts)
